TO MAKE FRIED RICE EASY
Follow these simple steps to create a tasty meal in minutes.
You

Step 1
Place one cup of rice in a medium saucepan and then add one
cup of water. Cover with a tight fitting lid and bring to the boil over high
heat. Reduce heat to medium-low and cook, without lifting the lid, for 11
minutes or until the water has been absorbed. Remove from the heat and allow to
stand for 5 minutes without lifting the lid.
Step 2
Rinse the rice under cold running water. Drain well. Spread
rice over a large baking tray. Place in the fridge for 2 hours or until cool
and rice is dry on the surface.
Step 3
Heat a wok over medium-high heat. Add 1 teaspoon peanut oil
and swirl to coat the base of the wok.
Step 4
Lightly whisk 2 eggs. Add half the egg to the hot wok and
swirl to cover base of the wok. Cook for 30 seconds or until just set. Lift the
egg from the wok and transfer to a clean work surface. Repeat with the
remaining egg. Use a large sharp knife to coarsely chop the omelettes.
Step 5
Heat 1 teaspoon peanut oil in wok over high heat. Add 3 finely
chopped bacon rashers, and stir-fry for 3 to 5 minutes or until lightly
browned.
Step 6
Add 1 crushed garlic clove, 3 finely chopped green onions and
1 cup frozen peas. Stir-fry for 2 minutes.
Step 7
Add the cold rice, bean sprouts, and 1 tablespoon soy sauce
and the chopped egg and stir-fry for 3 to 5 minutes or until the rice is heated
through and the peas are tender. Season with ground white pepper. Serve immediately.
